Tej

Tej is a honey wine. It is made and used in Ethiopia and Eritrea. It is flavored with the powdered leaves and twigs of gesho. This is a bittering agent.

Tej has a sweet taste. Berz is a sweeter, less-alcoholic version of tej, and is aged for a shorter time.

Tej is not often used as an ingredient in cocktail recipes.
