The Hanalei Sun cocktail recipe. This cocktail is an infusion of vodka and pineapple chunks. First peel, core and cut the pineapple into small pieces. Then put the pineapple chunks and the vodka into a bowl. Cover it and let it sit in the fridge for a week. Stir your Hanalei Sun once a day. Strain everything well and let the fruit sit in the strainer (or sieve) for some 20 minutes so that the all the liquid gets out. Then put the liquid into a bottle which can be kept for two weeks in a refrigerator. The vodka can be replaced with white rum.
Serve the Hanalei Sun in a coupe glass. Make sure the drink is served cold. Garnish with a pineapple wedge. Enjoy!
