Lemon Meringue cocktail ingredients:

° Indigo Gin: 5 cl (1.7 oz)
° Limoncello: 2.5 cl (0.85 oz)
° Lemon Juice: 1 cl (0.34 oz)
° Water: 1 cl (0.34 oz)
° Caster Sugar: 85 gr
° Egg White
° White Wine Vinegar: 0.5 tsp
° Roasted Almond Crumbles
° Dried lemon slice

Lemon Meringue cocktail instructions:

1) Prepare the Sugar Syrup: In a small jug, combine water, fresh lemon juice, and 20g of caster sugar. Stir the mixture until the sugar completely dissolves. Set this aside for later use.
2) Whip the Meringue: Take the egg whites and white wine vinegar, and whisk them together until you achieve soft peaks. Gradually add 65g of caster sugar while continuing to whisk. Keep whisking until the meringue turns glossy and smooth, indicating it’s ready.
3) Mix the Cocktail: Pour the Indigo Gin and Limoncello into a shaker, along with the sugar syrup you prepared earlier. Fill the shaker with ice and shake vigorously until the mixture is well-chilled.
4) Assemble the Drink: Double-strain the chilled cocktail mixture into a champagne flute or a martini glass. This ensures a smoother drink.
5) Top with Meringue: Using a piping bag for precision and elegance, top the cocktail with the freshly whipped meringue. This adds a luxurious texture and visual appeal to the drink.
6) Garnish and Serve: Normally a slice of a dried lemon is used to garnish the cocktail, but we decided to give it a twist and roasted almond crumbles for an extra layer of flavor and a beautiful presentation.
