Mimosa origin and history:

While there’s no definitive account of its creation there are a few theories:

One prevalent theory suggests that the Mimosa was first served at the Hôtel Ritz Paris in the 1920s. The story goes that the bartender at the Ritz Paris, inspired by the vibrant yellow flowers of the mimosa plant, combined Champagne with freshly squeezed orange juice to create a refreshing and visually striking cocktail.

Another theory attributes the invention of the Mimosa to the Buck’s Club in London during the 1920s or 1930s. This private members’ club was known for its innovative cocktails, and it’s plausible that the Mimosa was born from experimentation with Champagne and citrus juices.
